Royce Mitchell's Honey Roasted Nuts

Judy Mitchell shared Royce’s delicious recipe for honey roasted cashews with me after I’d eaten them at their house last weekend.  Without any doubt they are the best I’ve ever eaten.

  • 1 pound Cashews
  • 2 tablespoons of Honey
  • 1½ tablespoons of real Maple Syrup
  • 1½ tablespoons of Unsalted Butter
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla
  • ¼ teaspoon Cinnamon
  • 2 tablespoon Sugar
  1. Preheat oven to 350 degrees and line a baking sheet with tin foil.
  2. Measure out all ingredients and combine the honey, maple syrup and butter. Microwave until butter is melted {about 25-30 seconds}.
  3. Then add salt, vanilla and cinnamon to the honey mixture and stir. Place cashews in a medium size bowl, pour the honey mixture over the nuts and toss.
  4. When coated spread on the prepared cookie sheet {forming a single layer} and bake for 6 minutes.
  5. Remove from oven, toss again and place back in the oven for 6 more minutes.
  6. Remove and pour into a clean bowl, toss with the 2 tablespoons of sugar and a little salt to taste and let cool, stirring occasionally.
  7. When completely cool pour into a glass jar with an air-tight lid.
