Toasty Bacon Flutternitters


  • 6 slices bacon, fried
  • 4 slices whole grain sourdough bread
  • 1/4 cup creamy peanut butter
  • 1/4 cup marshmallow fluff

Homemade Marshmallow Fluff

  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 2/3 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • pinch of salt


  1. Break bacon into pieces that will fit inside the sandwiches.
  2. Toast the bread either in a toaster or… in the leftover bacon grease in a skillet.
  3. Spread 2 slices of bread with peanut butter and the other 2 with marshmallow.
  4. Place the bacon on top of the peanut butter and press the sandwiches together.
  5. Slice in half and eat!

Homemade Marshmallow Fluff

  1. Add the egg whites and cream of tartar to the bowl of your electric mixer. Using the whisk attachment, beat until the egg whites are frothy. Add the corn syrup, sugar and water to a small saucepan over medium heat until the mixture boils. Let boil for about 5 minutes, stirring occasionally until the sugar reaches a temperature of 240°F on a candy thermometer.
  2. With the mixer on medium speed, gently pour the hot syrup into the egg white mixture. Add the vanilla extract and the salt, then increase the mixer speed to high and beat until stiff peaks form, about 5 minutes. Store the fluff in the fridge.
