Key Lime-Coconut Smoothie


Key Lime-Coconut Smoothie
A cross between Key lime pie and a coconut mojito, this smoothie makes a great breakfast drink or sweet afternoon treat. Sprinkle some shredded coconut.

Ingredients

  • 1/2 cup coconut milk
  • 1/4 teaspoon grated lime rind
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1 (6-ounce) carton Key lime fat-free yogurt, frozen
  • 3 ice cubes

Preparation

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 40-45 seconds or until desired consistency is reached.
  5. Serve immediately.
