Caramel Espresso Smoothie
For a thicker smoothie, make sure the tofu is cold.

Ingredients

  • 3/4 cup vanilla light soy milk
  • 2 tablespoons fat-free caramel topping
  • 6 ounces light silken tofu, drained and chilled
  • 1 (.93-ounce) packet iced coffee-flavored instant coffee
  • 1 1/2 cups ice cubes

Preparation

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 40-45 seconds or until desired consistency is reached.
  5. Serve immediately.
